This tomatillo salsa is a bright and refreshing addition to your early summer entertaining. I love to serve it with avocado and raw fish for a light and unexpected twist on chips salsa. This snack goes perfectly with a crisp, cold Citrus Jammer Gose from Sixpoint Brewery in Brooklyn and is a great way to kick off a barbecue.
Carl Dooley's Easy Tomatillo Salsa
2 1/2 cups peeled and chopped tomatillos
1 jalepeno, chopped up
1/4 cup chopped onion
1 tablespoon salt
1 tablespoon sugar
2 tablespoons lime juice
Fresh cilantro leaves
Place all ingredients in food processor and pulse until coarsely chopped & blended. Add some chopped cilantro and pulse once more to blend in.
Serve with forked avocado, cubed raw fish like American Red Snapper and your favorite tortilla chips! Have some Tabasco Green Hot Sauce on hand if you want some extra heat!
